Local Review: Pat’e Palo, Santo Domingo

Famous for being the first Tavern of the New World, Pat’e Palo shines continuously under the direction of Executive Chef Saverio Stassi, whose passion for food consistently delivers some of the best plates in the Dominican Republic.

Cobblestone floors and exposed brick preserve the colonial style of the restaurant, while nautical memorabilia placed around the grounds exude its history as one of the places famed pirate Francis Drake ventured into. It’s a unique ambiance that cannot be recreated anywhere else.

The food is also one of a kind and reflects Chef Stassi’s love for his work. Two of our all time favorite appetizers are the Samosas de Ropa Vieja de Guinea, served alongside a refeshing and spicy yogurt and jalapeño sauce, and the Crispy Apple, showcasing fried apple rings as a base for parmesan fondue, onion and ginger confit and sautéed shrimp. Crispy AppleSamosas de Ropa Vieja de Guinea

While all the dishes we have ever tasted are beyond excellent, on this particular visit we ordered the Cordero Para Don Alberto, a rack of lamb that was cooked to melt in your mouth perfection,

the Tournedos Rossini, adorned with foie gras mousse and mushrooms, the Chili Sea Bass, atop a stew of black beans and chilies,

and the Bavette’s Risotto, made with mushrooms and saffron and topped with delicate slices of San Danielle prosciutto and grated parmesan.

Other all time favorites of ours are the Ossobuco de Chivo and the Purple Passion, which features salmon filet and shrimp croquettes.

If you ever need to impress a client, show out-of-towners a great meal, or just want to make your stomach happy, Pat’e Palo is the surefire way to accomplish your mission. Everything is always delectable. This is not one of those restaurants that is excellent one day and a total flop the next.

We simply love love love Pat’e Palo and Chef Saverio Stassi for raising the bar in Dominican gastronomy.
